Miso Beer-Battered Edamame
Serves 4 to 6
- 1 cup beer (like Kirin)
- 1 cup all-purpose flour
- 3 tablespoons miso (like Cold Mountain - Mellow Red)
- 1 tablespoon furikake w/sesame and nori
- 1 tablespoon kosher salt
- 30 ounces of edamame (remove from pod)
- Vegetable oil (enough for deep frying)
In a large stock pot heat oil over high heat to 350° (use a deep fry thermometer). Mix beer and flour together in a large bowl. Add miso, furikake, and salt mix together thoroughly. Take a handful of the edamame and dip into the batter, remove and fry. Remove the edamame when the batter reaches a golden brown. Continue until all edamame is cooked. Serve immediately.
